Vanilla, Peru Chocolate, Pistachio, or Hazelnut Praliné… surprise yourself with these bold, intense and always delicious flavors. All our gelatos are made from hand-selected ingredients using preparation techniques borrowed from cooking and pastry-making in order to attain the perfect balance of flavors. Fruits are sometimes gently candied, pickled, reduced like sauces, infused or oven-baked. All of these techniques contribute to the enhancement of the flavors and gives each gelato their strong character. Behind the apparent simplicity of some of the flavors hides a veritable work of research in search of a true taste. The vanilla gelato, for example, combines three kinds of vanilla: Indonesia with its peppery aromas, Ouganda for its finesse, and Tahiti for its floral sweetness.
