THE CHOCOLATE MANUFACTURE

It all started here, with the desire to make craftsmanship visible in the heart of the city and bring it up to date. When embarking on this journey, Alain Ducasse had an obsession, a quest: to learn, discover skills, and tell a new story.

For 10 years, we have been the only ones to roast 100% of our chocolate on a large scale right in the heart of Paris. All our bonbon recipes are created and crafted using our in-house chocolate production. Similarly, we use dried fruits to make our pralines and fresh fruits to make our ganaches.

WE DO NOT  BUY OUR CHOCOLATE — WE PRODUCE IT

<pstyle="text-align: justify;">At the Manufacture de Chocolate, every cocoa bean is transformed thanks to a mastery of meticulous techniques for each step, techniques that have been carefully passed down to the team, resulting in a powerful chocolate ritual that is minimally sweetened. Up to 16 precise actions are required to craft a single chocolate bonbon.

Chocolat Alain Ducasse stands out for its “haute couture” approach to its collections, entirely crafted in Paris in an artisanal manner, following a seasonal calendar of events. This craftsmanship is based on three pillars: the ingredient, the technique, and the taste.

Our chocolatier-roasters create daily a range of products, including chocolate bars, bonbons, dragees, chocolate-coated candied fruits, and spreads. Each recipe offers a perfectly balanced and unforgettable taste.

THE MANUFACTURE DE CAFÉ

In 2018, the Manufacture de Café Alain Ducasse opened on Rue Saint-Sabin in Paris, with Veda Viraswami, Master Roaster, at the helm to offer a “haute cuisine” coffee experience, featuring a selection of exceptional varieties and mastery of every step of production.

Thanks to the creativity, expertise, and passion of Veda Viraswami, the Manufacture presents a collection of specialty coffees whose unique origins highlight the precious connection between the land and its aromas — a journey through diverse farms, soils, and communities.

THE MANUFACTURE DE CAFÉ

Mild, intense, bold, or fruity, our coffees showcase unique aromas, elevated by expertly controlled roasting. From India to Ethiopia to Brazil, each bean offers a tasting experience specific to its origin, creating a true flavor journey around the Earth and its treasures. Whether you use an espresso machine, moka pot, or drip filter, our coffee specialists will recommend the extraction methods that best reveal the aromas of each single-origin or blended variety.

Treat your clients and colleagues to a unique and flavorful coffee experience. Available in whole beans or in capsules (Nespresso-compatible), our coffees suit any machine.

THE MANUFACTURE DE BISCUIT

In 2022, a new Manufacture was born on Rue de la Roquette, this time reimagining the classic biscuit. Following the same philosophy of bringing fresh perspectives to timeless traditions, this new venture focuses on transforming biscuits into elegant creations.

Pastry chef Flora Davies reinterprets traditional recipes, infusing them with elegance, diversifying flavors, and reducing sugar to retain only the essential, intense taste. Our range of handcrafted biscuits, the result of extensive research, development, and constant reinterpretation, is consistently made using meticulously sourced, high-quality ingredients.

These thoughtfully crafted recipes add a delicious, refined touch to your events and business gifts.

CRUNCHY, SOFT, CRUMBLY, OR MELTINGLY TENDER

THE MANUFACTURE DE GLACES

In June 2021, Alain Ducasse’s Manufacture de Glaces opened its doors on Rue de la Roquette. The vision remains unchanged: traditional, artisanal techniques combined with the use of high-quality ingredients.

Our ice cream chef, Marcelo Mabilia, and his team craft preparations that enhance the natural flavors of each carefully selected ingredient. The result is gelatos and sorbets with unique and irresistible flavors, ideal for adding a refreshing and delicious touch to your events.
